What’s in Season For February?
Can you feel the love in the air? We’ve got a new list of delicious zero waste recipes for the month of February. Even though this month lacks in days, there’s no lacking in flavours in produce!
For this month, we have chosen bananas, grapefruit, beets, and parsnips as the select ingredients for creative cooking. These are all great ingredients since there are little things that are overlooked (such as the peels of the fruits and the tops of root veg), which can perfectly complement these recipes.

Beets
If you buy your beets with the tops/greens, don’t throw them away! They’re delicious and nutritious and go so well in this tasty salad.
And to keep your beets fresh, separate the green tops from the beets, leaving just 2.5 cm of stem (otherwise the greens will draw moisture away from the beet) and store in the fridge. Only wash your beets once you are ready to use them. Once peeled or cut, store in an airtight container in the fridge. And if the beets are going limp, you can revive them with a soak in cold water.

Bananas. The greatest grab-n-go fruit snack known to humankind. Not only that, but it’s arguably one of the greatest additions to the humble breakfast that is the almighty pancake.
Bananas are packed full of potassium and fiber that will help with digestion and cramping. With this sweet and savory recipe, you’ll have the perfect balance of electrolytes (sodium and potassium). Having this sweet addition, there’s no need to add extra sugar in your pancakes, which makes the sweetness all natural! This recipe utilizes all of the banana so you get all of the goodness in one.

And to keep your bananas fresh, keep them separate from other fruits to prevent your other fruit from ripening quickly. To slow the ripening of your bananas, wrap and seal the stems together with plastic wrap. Once they are ripe, pop them in the fridge. The peel will turn black from the cool air, but the inside is perfectly fine and should last a couple more days.
