What’s In Season In January?

Happy New Year, everyone! Now that the holiday cookies are all gone, let’s get back to healthy fruits and vegetables!

We’ve all noticed that food prices are on the rise. Now, it’s time to rethink your food purchases and make the most of the ingredients you buy. Though you may have made efforts to prevent food waste in your restaurant, hotel, or kitchen, now is the time to level it up with these recipes we’ll be putting out!

You will be able to boost your creativity, with recipes that can be made not only in your hotel or restaurant, but also at home.

January is a great time to get your hands on some carrots, kiwis, kale and tangerines, and we have the perfect zero food waste recipes lined up.

We believe food waste prevention is a tasty way to save money, and to enhance your creativity. So let’s get started!

Carrots

Carrots are a great staple to make several dishes, and we have the perfect combination of recipes for you! It’s “2-birds-1-stone”.

Carrots are crunchier and sweeter than they usually are compared to the rest of the year. You can enjoy it raw or roast it, which brings out the sweetness more, making it a great sweet/savory dish. In addition, the carrot tops have a taste like parsley, which is an amazing ingredient to bulk up your pestos or use in marinades! Not only do they taste great, but they are also high in antioxidants and a great source of vitamin A and great for your eyes!

And to keep your carrots fresh, store them in the fridge in an airtight container. If they become less crunchy, you can revive them by soaking in cold water.

Kiwis

Kiwifruits are sweet, yet low in calories. They contain about as much potassium as bananas and a high amount of Vitamin C, more than oranges. It is also rich in Vitamins A and E, flavonoids and minerals.

To check the ripeness of kiwifruit, hold it in your hand and gently squeeze the fruit. There should be a slight give or softness to it, not rock hard.

And to keep your kiwis fresh, store them outside the fridge until they are ripe. Once they are ripe they should be refrigerated to increase their shelf life. And you can also freeze it!
